Loop Sunday Lunch - Dad's Best Pork Chops

For today's Sunday Lunch, why not try this quick, easy recipe from Taste of Home that Dad is sure to love? 

Dad's Best Pork Chops 

Ready in: 30 mins Serves 4


2 medium tomatoes, chopped

1/4 cup chopped onion

3 tablespoons minced fresh mint

1 jalapeno pepper, chopped

2 tablespoons key lime juice

1-1/2 teaspoons minced fresh rosemary

4 bone-in pork loin chops (3/4 inch thick)

1/4 teaspoon salt

1/4 teaspoon pepper


In a small bowl, combine the first six ingredients. Chill until serving.

Sprinkle pork chops with salt and pepper. Grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Serve with salsa. Yield: 4 servings.

Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
