Whole Wheat and Carrot Noodles with Bolognese Sauce

Cooking is a fun way to explore your creativity and bond with your loved ones.

Some days though, you just want to get in and out of the kitchen quickly with a tasty meal in tow.

Here are some quick and easy meals you can whip up for yourself and the family.

 

Whole Wheat and Carrot Noodles with Bolognese Sauce

For the noodles

1 pack whole wheat pasta

1 large carrot, spiralised

Ingredients for the Bolognese Sauce

1 tbsp olive oil

1 medium-sized onion, chopped

1 stalk celery including the leafy bits, chopped

3 cloves garlic, minced

1 lb ground chicken or lean ground beef

1 (28 oz) jar of your favorite store-bought pasta sauce

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Fresh basil and parsley, chopped as garnish

Fresh parmesan cheese 

Optional: Add zucchini which can also be cooked a few ways – steamed, boiled or pan-fried

Directions

1. Spiralise your carrot and set aside.

2. Cook the whole wheat pasta as per instructions on the package

3. In the last 2 minutes of cooking, add the spiralised carrots to pasta to cook the carrots until al dente. Once done, drain and set aside.

4. Drizzle olive oil in a large saucepan over medium-high heat and sauté onion, celery and garlic until fragrant, about 3 minutes.

5. Add lean ground beef and cook until brown. Try not move around the beef so that you develop brown caramelisation. Brown means flavour.

6. Drain excess liquid as necessary.

7. Add the dried herbs and the jar of pasta sauce. Stir to a boil then reduce heat and simmer for about 5 mins.

8. Add the cooked noodles to the pan and coat with your sauce.

9. Garnish with fresh herbs and parmesan. Serve hot.
