Black Bean, Cheese and Beef Burrito

We have been spending a lot more time at home these days and a lot more time in the kitchen as well.

Cooking is a fun way to explore your creativity and bond with your loved ones.

Some days though, you just want to get in and out of the kitchen quickly with a tasty meal in tow.

Here are some quick and easy meals you can whip up for yourself and the family.

 

 

Black Bean, Cheese and Beef Burrito

Serves 4

 

1 tbsp. butter

2 cups Garden Foods Fajita Medley

1 - 15 oz. can black beans, rinsed and drained

¼ cup chopped cilantro or chadon beni

1 tbsp. Sunflower Soft Luxury Spread

1 lb. ground beef

1 tsp. cumin

Salt and pepper, to taste

4 flour tortillas (10 inches), warmed

1 cup The English Cheese Co. White Mild Cheddar Cheese, grated

2 tomatoes, chopped

1 cup finely shredded cabbage

Toppings: salsa, sour cream, minced fresh cilantro or chadon beni

 

  • In a sauté pan, heat butter over medium heat; sauté fajita medley mix until tender.
  • Stir in beans; heat through. Add Cilantro and stir. Set Aside
  • In another sauté pan, heat butter over medium heat. Add ground beef and cumin and cook until there’s no more pink and water is reduced. Season with salt and pepper, to taste.
  • Spoon about ½ cup of vegetable mixture off centre on each tortilla. Add ¼ of the ground beef mix.
  • Sprinkle with cheese, tomato and lettuce. Fold sides and ends over filling and roll up.
  • Serve with optional toppings as desired.

 

Variation: To make this a burrito Bowl, add ¾ cup cooked rice to the base of your bowl. Arrange vegetables, meat, tomatoes, lettuce and other toppings.
