Smashed Hummus with Pita

We have been spending a lot more time at home these days and a lot more time in the kitchen as well.

Cooking is a fun way to explore your creativity and bond with your loved ones.

Some days though, you just want to get in and out of the kitchen quickly with a tasty meal in tow.

Here are some quick and easy meals you can whip up for yourself and the family.


Smashed Hummus with Pita

Serves 4

For the Hummus:

3 tbsp. butter

1 medium onion, diced

Salt and pepper

4 garlic cloves, minced

½ tsp. ground cumin

¼ tsp. red pepper flakes

1 cup chopped parsley

4 cups canned chickpeas (save chickpea liquid)

2 tbsp. lemon juice

2 tbsp. olive oil

  • Put butter in a saucepan over medium heat. Add onion, season with salt and pepper, and cook gently until softened, about 10 minutes.
  • Raise heat to medium-high. Add garlic, cumin, red pepper flakes and parsley. Stir to combine. Let sizzle without browning for 1 minute.
  • Add chickpeas and let them heat through.
  • With a potato masher or wooden spoon, crush about half the beans. Stir well, taste and adjust seasoning.
  • Add ½ cup chickpea liquid and let mixture simmer briskly for a minute or two. Stir in lemon juice and olive oil.

 

Minted yoghurt:

3 tbsp. chopped mint

1 cup thick yoghurt

Salt and pepper, to taste

 

Garlic sauce:

¼ cup mayonnaise

2 tbsp. lemon juice

1 minced garlic clove

3 tbsp. olive oil

Salt to taste

 

For Vegetable Topping:

1 tbsp. extra-virgin olive oil

1 pkg. Garden Foods Sofrito Medley, defrosted

½ tsp. dried oregano

¼ tsp. salt

¼ tsp. ground pepper

  • Heat oil in a large skillet over medium heat. Stir in frozen vegetables. Cover and cook, stirring occasionally, until the vegetables are tender, 4 to 6 minutes.
  • Stir in dried herb, salt and pepper.
  • Serve smashed hummus warm in pita. Top with sautéed veggies and garnish with mint yoghurt and garlic sauce.
